Chawal ki Kheer | Rice Kheer | Rice pudding | Recipe

Chawal ki kheer or Rice pudding or Payasam, whatever you may call it, is a quintessential Indian dessert made throughout India in many variations. It is one of the most popular and favourite sweets in India. Some make it in coconut milk and others in plain milk. The most common recipe is to boil the rice in milk and then sweetening it with either sugar or jaggery. I am making a verision in which I saute the rice first and then add milk. The creaminess of milk and the nuttiness of the sauteed rice makes it a perfect dessert to relish.

Ingredients
  • 500 ml Milk with 6% fat content
  • 50 gm Rice
  • 1/4 cup Sugar
  • 1 tbsp Ghee
  • 10-12 Almonds
  • 18-20 Raisins
  • 1/2 tsp Ground Cardamom
  • 1 small Pinch of Ground Nutmeg
Instructions
  1. Boil milk on a low flame.

  2. Wash the rice thoroughly and spread it on a piece of cloth to dry.

  3. While the milk boils and the rice dries slice the almonds.

  4. Once the milk boils let it simmer for 5 more minutes.

  5. Put a saucepan on a burner and add ghee.

  6. Add dried rice into the hot ghee and saute rice till it becomes light golden brown in colour stirring continuously.

  7. Transfer the sauteed rice to a mixer jar and grind it to a coarse texture.

  8. Transfer this groud rice baxk to the saucepan and add the boiled milk.

  9. Let the rice cook in the milk for 10 minutes or till the rice softens.

  10. Add in the sugar, raisins, half of the sliced almonds, ground cardamom and ground nutmeg.

  11. Mix well and turn of the flame.

  12. Garnish with remaining almonds and serve chilled or hot as per your liking.
