Gajar ki Kheer | Carrot Kheer | Recipe

In winters, any Indian household is full of fresh produce and red carrots is one of them. Winter is a season halwas and burfis and all other sweet preparations. This Gajar ki kheer will definitely satisfy these sweet cravings. Red carrots are naturally sweet and very flavourful. Not only does this taste delicious but the rich and deep orange colour pleases the eyes also. Tastes equally good warm or chilled and a must try in this winter.

  • 1 large Carrot
  • 500 ml Milk full cream
  • 2 tbsp Ghee (clarified butter)
  • 2 pods Cardamom
  • 1 inch Cinnamon stick
  • 1/2 tsp Cardamom powder
  • 1 pinch Nutmeg powder
  • 7-8 Almonds
  • 1/4 cup Sugar
  1. Pour milk in a heavy bottomed vessel and bring it to a boil.

  2. Meanwhile peel and grate carrots.

  3. Slice Almonds and any other nuts that you are using.

  4. In a saucepan heat ghee and add cardamom pods and cinnamon stick.

  5. Once it sizzles add grated carrot and saute till ghee saperates.

  6. Remove cardamom pods and cinnamon stick.

  7. Add the boiling milk and let it reduce for 5 mins on a low flame.

  8. Once the milk has reduced to a nice consistency add sugar and mix well.

  9. Add cardamom powder and nutmeg powder and add in more than half of the sliced almonds.

  10. Cook for 1 more minute and turn off the flame.

  11. Pour it in a serving bowl and garnish with the remaining almonds.

  12. Serve hot or chilled as per your liking.
